Croissant sandwiches with roast pork filling

Looking for a delicious new idea for brunch or supper this Easter? This delicious croissant sandwich—with its elegant side—is as decadent as it is filling.

Ingredients / Servings: 2

  • 2 cups mixed greens

  • A drizzle of olive oil

  • 1 tablespoon balsamic vinegar or balsamic reduction

  • 1 ripe avocado

  • Juice of half a lemon

  • Salt and pepper

  • 2 croissants

  • 150 grams thinly sliced roast pork

  • 4 slices Swiss cheese

  • 2 soft-boiled eggs

  • 1 tablespoon prepared mustard seeds (or whole grain mustard)

Directions

  1. Place the mixed greens in a bowl. Drizzle with olive oil and add the balsamic vinegar. Gently toss. Set aside.

  2. Mash the avocado in a bowl, add the lemon juice, salt and pepper. Mix well. Set aside.

  3. Cut the croissants in half lengthwise, without separating them completely. Spread a generous amount of avocado on each and add the sliced pork roast and Swiss cheese.

  4. Place a filled croissant on each plate and add the mixed greens alongside. Cut the eggs in half and place them on the salad. Add a small spoonful of prepared mustard seeds (or whole grain mustard) to the yolks. Serve immediately.
